I know this might be a silly question, but i've already installed this theme, how do i update it ? should i install it as a new plugin, or copy the zip to the existing folder and overwrite all new files, or is there an easier way where i can keep my existing config and just update to the latest version ?

You will install the updated theme as normal from the theme installation screen. WordPress will overwite the new files and keep your settings.

Have you tried Appearance - Customize - Header - Sticky Menu - Sticky on Scroll (Should be ON) - Config sticky menu (The same with Main Menu)? It works for me.
